This study, investigates how different olive-derived oils affect oxidative stress and cardiovascular biomarkers in diabetic rats.
The oils evaluated were olive seed oil (OSO), de-stoned and dehydrated olive oil (DDOO), and extra virgin olive oil (EVOO).
The results showed that all oils significantly reduced biomarkers of vascular damage and oxidative stress, with DDOO standing out for its greater efficacy.
This oil not only reduced VCAM-1 and oxLDL levels, but also showed a strong antioxidant capacity, suggesting its potential in the prevention of cardiovascular and degenerative diseases, especially in the context of diabetes mellitus.
